1. Chicken Enchiladas


3 tomatoes

1/4 onions

3 clove of garlic

1 chicken breast

1 tablespoon of olive oil

Parmesan cheese to taste

Fresh coriander to taste

Salt to taste

Pepper to taste

4 tortillas


1. Season the chicken with salt and pepper to taste. Put it to boil with a clove of garlic until the chicken is cooked and then shred it.

2. In a pan, roast the tomatoes, the two cloves of garlic and the onion until they turn a little black. Once they are roasted, blend them and season with salt and pepper.

3.In a pan, add the olive oil, half of the sauce. Then add the shredded chicken and cook for 10 min.

4.Heat the tortillas in a pan until they are soft. Add chicken to each of the tortillas and roll-up.

5. Arrange the rolls on a plate, add the remaining sauce, and then add the Parmesan cheese and decorate with cilantro to taste.

2. Tuna Salpicon


2 tablespoons apple cider vinegar

1 tablespoon of oregano

Salt to taste

Pepper to taste

1/2 cups of olive oil,

2 cans of tuna

2 tomatoes

1/2 red onions

5 green olive

Coriander to taste

1/4 red bell pepper


1.Remove the liquid from the tuna.

2. Dice: tomatoes, onions, olives, and bell pepper.

3.In a bowl, add the previously chopped vegetables, then add the vinegar and let it rest for 5 min.

4.After 5 min add the tuna and finely chopped cilantro. Mix well and season with salt, pepper and oregano to taste.

5. You can accompany it with toast or crackers.

3. Banana and oatmeal pancakes


2 bananas

1 cup oatmeal

1 egg

1 teaspoon cinnamon

2 teaspoons of baking powder

1 Teaspoon vanilla extract

1 1/4 cups milk



1.In a blender, put the bananas, the egg, the oats, the cinnamon, the vanilla, and the milk. Blend until a smooth paste is left.

2. Put a pan over medium heat and add a little butter.

3.When the pan is hot, add a little of the mixture according to the size you want the pancakes. Cook on both sides.

4. Accompany with the honey of your preference and fruit

5. Cucumber and tuna rolls


1 cucumber

1 can of tuna in water

1/2 avocado

3 tablespoons mayonnaise

1 tablespoon of lemon juice

1/4 cups of celery

Salt to taste

Pepper to taste

1/2 onion

1 tablespoon of olive oil


1. Cut the cucumber into slices.

2. Drain the liquid from the tuna.

3. Cut the celery, onion, and avocado into squares.

4. In a bowl, add the tuna, onion, olive oil, mayonnaise, avocado, and celery. Mix well and season with salt and pepper to taste.

5. Form the rolls with the cucumber slices and the filling you just made.

6. Beef lettuce rolls


1/2 pound ground beef

1/4 cups onion

1 carrot

1/2 red bell pepper

1 tablespoon garlic powder

3 tablespoons soy sauce

1 tablespoon cornstarch

1 tablespoon vegetable or olive oil

Salt to taste

Pepper to taste

Lettuce leaves


1.Cut the pepper, carrot, and onion into squares.

2. In a pan add the tablespoon of oil and fry the vegetables you previously cut for 5 minutes.

3. After 5 min add the ground beef and mix well. Season with salt and pepper to taste and add the soy sauce.

4. When the meat has a slightly fried, add 1/2 cup of water and cover.

5. In a glass, add 3 tablespoons of water and the tablespoon of cornstarch, and mix.

6. Add the cornstarch mixture to the meat and mix. Let cook for 30 min.

7.When the meat is cooked, make the rolls with the lettuce leaves and the meat.

7. Smashed potatoes 


2 medium potatoes

salt and pepper to taste


A tablespoon of milk (optional)


1. Peel and cut the potatoes into squares and bring them to a boil with plenty of water. Cook until you poke the potatoes with a fork, and it comes in easily.

2. When the potatoes are cooked, drain all the water.

3. You mash the potatoes with a fork, a potato masher or a glass.

4. Next, add two tablespoons of butter and milk. Mix well and season with salt and pepper to taste.

5. You can use this recipe as a side for chicken, beef or fish.

8. Rice with eggs


1 clove garlic

1/4 onion

1 cup of rice

2 cups of water

Salt to taste

Pepper to taste



Olive oil


1.In a pan, add a tablespoon of olive oil, the garlic, and the onion previously minced. Fry for a few minutes.

2. Add the previously washed rice and sauté along with the onion and garlic. Fry for 2 min

3. Add the 2 cups of water, salt and pepper to taste, cover and bring to a boil over high heat.

4. When the rice water has dried, mix it a little, lower the heat as low as you can, and covered. Let it cook for 25 min.

5.While the rice cooks, fry the eggs as you like them and season with salt and pepper.

6.Serve your rice with egg and decorate with cilantro.
